Banana bread pancakes

1/2 cup rolled oats

1/2 cup desiccated coconut

1/2 cup milk (can also use coconut milk, almond, cows)

3 eggs

1/2 tsp ground cinnamon

1 tsp vanilla extract

1 tsp baking powder

1 Tbsp ground flax seed or chia seeds

1 smashed banana

Maple syrup, Greek yoghurt and berries or extra banana to serve.

Combine oats, desiccated coconut, milk, eggs, cinnamon, vanilla, baking powder and flax seed.

Rest the batter for 30 mins.

Fold smashed banana through mixture.

Heat a non-stick pan over a low heat with a little olive oil and spoon in the pancake mix, 2 table spoons per pancake.

Cook over a low heat so that it cooks through. Flip over to cook other side. Serve with a drizzle of Maple syrup, a dollop of yoghurt and mixed berries.
