1/2 cup white quinoa rinsed
1 1/2 cups water
1/2 cup almond or normal milk
1 medium red apple grated
1/3 cup plain yoghurt
1 tbsp. raw honey
1 medium mango sliced or a handful of mixed berries
1 tbsp. goji berries
2 tbsp. pistachios roasted and chopped coarsely
Combine quinoa and the water in a small saucepan; bring to the boil. Reduce heat; simmer covered for 10 mins or until quinoa is tender, stir in apple
Place yoghurt and honey in a bowl and stir together
Serve porridge topped with mango slices, goji berries, pistachios and honey yoghurt
